Swiss Chard Stew

INGREDIENTS:

Chickpeas. Swiss chard. Bread. Garlic. Onion. Tomatoes. Olive oil. Salt. Food coloring (carterilla). Chorizo de orza (optional). A dried red pepper. Vinegar (optional).

 

PREPARATION:

Rinse the chickpeas and soak them in water overnight. Chop the Swiss chard, wash it, and place it in a pot with water. When it starts boiling, add the chickpeas, salt, washed and opened dried red pepper, and a bay leaf. Let it boil until the chickpeas are tender. In a bit of olive oil, fry a slice of bread and set it aside. Then fry the garlic, onion, and grated tomato. Make a paste with the sautéed mixture, the slice of bread, and the dried red pepper. Add this paste to the pot with chickpeas and Swiss chard, along with the food coloring and chorizo (optional). Let it simmer slowly.
